    well you are talking about in general the shittiest cut of beef and bringing out all these flavors and to even attempt to make it tender you have to cook it for half a day or more. So yeah that would fit the description of what a slave would prepare for their family to eat. It is a sad bit of history but most likely true. And because BBQ is one of my top 2 favorite food in the world i am so damn glad they invented it.

    you know the sad thing is there isn't a whole lot of southern style bbq place around my area. They have the generic varieties where it just doesn't taste the same as what i can get when i am in socal.
    yeah i realy wish someday i can hit up alot of these fine dining joints. :D
