it's because you've saved it as a jpg. jpegs don't support transparency, if
you export the original file again as a png or gif the white section would be clear

A transparent background is a layer you use in PS (or other programs), you can save that information in a .psd file but not in a .jpeg file since it is a flat image and build up with pixels where every pixel needs a value between 0-255 for the 3 main colours (RGB-scale).
So whenever you save your .psd file as a jpeg it will force a value for the transparent pixels being (R:255 G:255 B:255) which is pure white.
And so your transparent background turns white instead of (R:245 G:245 B:255) Phunblue.
So before saving it as a jpeg, fill the transparent background with the matching colour of the forum you're showing your sig.

Nothing wrong with cropping images and using them as a sig.
Lettering on top of the table could give it a nice finish, besides you'll feel better near that cocktail than floating in the air.

 

The britney one I did like this: cut her head out of a pic, pasted it onto a cool background I found. Then smudged the edges like crazy! (smudge all layers on). Then used a layer mask and a splatter brush to get parts of her head to both sides.

Will explain the use of layer masks if needed.

I'm not realy sure which ones from christina and avril you mean . Can you post them?

edit: the christina one... used the 3rd party filter called Topaz on the pic to the right, then blended with the pic on the left. Played with the colors, added some light sources, et voila

 

still lookin for avril one, not sure whose sig it was
