    You can get a good rare steak on the barbecue if you're careful. The key is to counter them for an hour ahead of time (so they're closer to room temp at the center). Salt both sides as soon as you throw them on the counter. Then for 1" cuts (or slightly larger) use a mid-high heat on the barby, 4 minutes a side.
